Foxtail Millet Fried Rice Recipe






Ingredients:

  • 1 cup foxtail millet
  • 2 cups water
  • 2 tablespoons oil (preferably sesame or vegetable oil)
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 1 small carrot, finely chopped
  • 1/2 cup bell peppers (red, green, or yellow), finely chopped
  • 1/2 cup frozen peas
  • 2 tablespoons soy sauce
  • 1 teaspoon vinegar
  • 1/2 teaspoon red chili sauce (adjust to your spice preference)
  • Salt to taste
  • Freshly ground black pepper to taste
  • 2-3 spring onions, chopped (for garnish)

Rinse the foxtail millet thoroughly under cold water and drain.

In a medium saucepan, add 2 cups of water and the rinsed foxtail millet. Bring it to a boil, then reduce the heat to low, cover, and simmer for about 15-20 minutes or until the millet is cooked and the water is absorbed. Fluff the millet with a fork and let it cool.

In a large skillet or wok, heat the oil over medium-high heat. Add the minced garlic and chopped onions, and sauté for about 2-3 minutes until the onions turn translucent.

Add the chopped carrots, bell peppers, and frozen peas to the skillet. Stir-fry for another 3-4 minutes until the vegetables start to soften but are still crisp.

Add the cooked foxtail millet to the skillet and stir-fry for a few more minutes, mixing it well with the vegetables.

In a small bowl, combine the soy sauce, vinegar, red chili sauce, salt, and black pepper. Pour this sauce mixture over the foxtail millet and vegetables. Stir-fry for an additional 2-3 minutes until everything is well coated and heated through.

Taste the fried rice and adjust the seasonings, adding more soy sauce or chili sauce if needed.

Once everything is well mixed and heated, remove the skillet from the heat.

Garnish the foxtail millet fried rice with chopped spring onions.

Serve hot as a main dish or side dish. You can also serve it with a side of chili garlic sauce or your favorite hot sauce if you like it spicy.
